I've switched to VMWare Fusion from Parallels. If you are considering using virtual machines on the Mac then I highly recommend you start with Fusion instead of Parallels.
I converted my Windows Vista virtual machine to Fusion using the free converter from VMWare. After manually uninstalling the various device drivers from Parallels I was able to boot up Vista and it seems to run faster. The VMWare Unity works better than Parallels Coherence.
The biggest bonus is that you can take advantage of all the virtual machine appliances that are available from VMWare. You can also run 64bit virtual machines.
